Travis Boileau - NPHS Culinary

  1. Wednesday was my first day back interning, Ms. Fogo was so glad to have me back. It was also the first day the bistro opened back up this semester. I did not feel that it was that busy though, not the usual chaotic scene. We served this delicious beef stroganoff, with strawberry shortcake. Also, Mrs. Letourneau had these two girls form culinary two make chocolate chocolate chip cookies, and they came out like rocks. It was a disaster!

  3. On Moday I had to make cookies for Ms. Fogo, she did not have any because of break. And Joe's Cafe is opening this week, so they need cookies.
    On Tuesday I made a carrot cake with this girl Nicole in culinary IV. We need it for the bistro tommorow.

  4. Wednesday is Bistro day, we served pecan crusted pork loin with smashed potatoes and steamed green beans. They also got a piece of carrot cake with it. The kitchen ran much smoother today, because me and Ms. Fogo made a work schedule for the students. They were not to happy about it, but it worked out better. The kitchen stayed alot cleaner this way.

  5. Thursday was a pretty boring day, Mrs. Letourneau's class made red lobster biscuits. But I helped Ms. Fogo make next weeks menu. We are serving a open faced beef melt sandwhich with bistro mashed potatoes, and a frosty mocha pie. Sounds delicious!

    Mrs. Letourneau had her class practice how to make the pizza dough, because they are going to make pizza on thursday. So they could pretty much anything they wantedto with the dough. Most made either cheese sticks or cinnimon rolls.

    I made the Frosty Mocha Pie with the three Culinary II students in Mrs. Letourneau's fourth block, for the Bistro tommorow. We had to make four of them so we each had to make one. They looked really good, I can not wait untill tommorow to try a piece.

  9. Wednesday 2-4
    Today was a complete and total disaster, I was aw-struck, when I came into the kitcheen and Ms. Fogo told me that the kitchen was broken. No joke, the stove, grill, ovens, and fryer was all down. We found out that the custodian that cleans the kitchen for us hosed down the kitchen and shorted all of the circuit breakers and wet the pilot lights in the stove. So we had to post-pone the Bistro untill Friday.

    Mrs. Letouneau's class got to make pizza today, because the repair guy fixed the problem. Lacey, Juleen, and Tyler, the Culinary II students in Mrs. Letourneau's Culinary I class made Auntie Annes's Pretzles.

  11. Monday 2-9
    Today Mrs. Letourneau's class made white sauces, one of my favorite things to make. Most of the groups made cheese sauce, but one made brown sauce, and one made curry sauce. Then the Culinary II students made some chocolate cakes for the bistro on wdnesday.

  12. Tuesday 2-10
    Ms. Fogo had her students make tons of cookies for Saturdays catering event. I also had to make some along with the three Culinary II students. We made sugar and chocolate chip cookies drizled with chocolate, chocolate chocolate chip cookeis with white chocolate drizzle, chocolate chip scones with chocolate drizzle, and choclate covered stawberries.

  13. Wednesday 2-11
    Today was Bistro day, we served a cheesy chicken enchalada with corn and a lettuce tomato salad or a cheeseburger with french fries. It went seemingly well, even though she did not make a work schedule, some kids volenteered to do somethings she needed done. But when I went to go deposit our sales, the book keepers were not there, so I have to go back tommorow to deposit it.

  14. Are you serious about the kitchen being broken?! that is an unlikely occurance im guess in right? did it cost a lot of moeny to fix the circuits?

  15. It seems like the bobcat bistro gets bigger and more known by all of the teachers. Everything you guys cook sounds really good. That is nice that they let you cook whatever the class is doing since they are limited on materials for the whole year and I know they don't get new materials till the next year.

    Today we tested a yeast roll recipe, to see if it needed to be tweaked or not. We found out that it needed a little more flour, than we thought.

    Today the students made sauce, we have a big lunch-in tommorow, so they made it for that. We also needed cake, so Ms. Fogo's classes made chocolate cake, which we also need for tommorow.

    Today is the the big lunch-in for the Leadership Team, I hope it goes well. They are serving Baked Ziti, Lasanga Roll-Up, Chicken Catchatora, Salad with Italian Dressing, and Yeast Rolls.

  19. On Tuesday Ms. Fogo had me test out using beef on the chicken cacchiatora, it actually turned out really good. All I did was dust beef and add it, instead of adding chicken.

  21. On Wednesday, it was Bistro day, we served beef tips and gravy over mashed potatoes with peas, it was awsome. We also served a turkey club sandwitch with pasta salad, a chicken caesar salad, and chefs salad.

  22. On Thursday I made quesadillas for myself, Ms. Fogo, Mrs. Letourneau. They were the most amazing quesadillas ever! I made them with chicken, cheese, salsa, and green onions.

    Tuesday, today, we had to make lots of cookies, for a catering event, and for Joe's Cafe of course. We made the usual, chocolate chip, double chocolate, and sugar.

    Wednesday, today at the bistro we served lasgana, with a roll, or honey chicken and rice, they were both delicious. For dessert we had frosty mocha pie, yum!

    Tuesday, today I made a pizza, but Ms. Fogo thought of the idea to put chicken on, and it turned out pretty good. Though I am not a big chicken fan either.

    Wednesday, today the bistro was put off, I was kinda of dissappointed to here this because, Mrs. Letourneau's class wa now going to run it. But I was happy for her because she has been waiting a long time to be appart of the restaurant. Plus it all worked out and the customers were happy, and that is was matters.

    Wednesday, its another Bistro day, were back on Wednesday, but now the restaurant is also open Thursdays, that way both Ms. Fogo and Mrs. Letourneau get a day to run it with their kids. Today we served pecan crusted pork loin, Cheeseburger basket, and chicken ceasar salad.

    Thursday, today is Mrs. Letourneau's second day at the bistro and I am glad to help her. Since the kids are still new at this she is still serving cold dishes, but htey are good. She had chicken salad croisant, chefs salad, and turkey roll-up.

    Wednesday, today was crazy, it was bistro day and we served pulled beef sandwitch, lemon chicken, and ceasar salad. Both of the main dishes were incredible! But what really made it crazy was the end of the day, when Mrs. Letourneau's class started getting ready for their bistro tommorrow, they are so unorganized.

    Thursday, toda is Mrs. Letourneau's third day at running the Bistro and it was amazing. All of the food was great, we served roast beef sandwich with potato salad, turkey club sandwich with potato chips, and cobb salad. We had an incredible 43 total orders, and between the to day totaled $346.25.

    Tuesday, today was kind of sad, Mrs. Letourneau cancled her bistro day on Thursday because her kids were bad. They were not following instructions or directions, so she told them that they could not cook for the rest of the week. Subsequently this means no bistro on Thursday, however we are still haiving it on Wednesday, horay!

    Wednesday, today was the last bistro that Ms.Fogo is doing, it is sad, but the food was as good as always. We served Roastbeef with french dip, ceasar salad, and pork ponzo.

  36. Ok. not cool. at all. i read this whole rostbeef and french dip thing and ceaser salad. and i am MUCHO hungry. like def not cool at all. It sounds like you really liked the Bistro. you thought those days were amazing and sad when it came to an end. Maybe someday i will eat at a food place where you are the cook. and i will order rostbeef and french dip thing and ceaser salad.

    Wednesday, as you know there is no bistro today, instead we were supposed to be doing a sort of iron chef thing, however, with the flash of power it did not happen.

    Thursday, today was the last bisro day for Mrs. Letourneau, and it was huge. She got a total of 87 orders, and sales were totalling $449.00, that is without the orders form student government.
